I love a good homemade salad dressing that is easy to make with simple pantry ingredients (nothing fancy or hard to find at the store). I also don’t really love vinegar – white, champagne, cider or otherwise so when I find a recipe that doesn’t require it, I hang on tight!
This is a keto-friendly salad dressing, vegan and paleo, too! I hope you love it as much as I do. You can make a big batch of this and keep it on the counter for a few days, too!
Ingredients:
- Juice of 2 Lemons
- Equal amount of olive oil (if 2 lemons is ½ cup of juice, then add ½ cup olive oil)
- 1 tsp salt
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp basil
- 1 tsp garlic powder (or minced garlic if you choose!)
Feel free to add more of these herbs, exempt others – whatever your tastes decide (or whatever is in stock in your pantry!).
Instructions:
Mix all ingredients together with hand blender or in a shaker and enjoy! A big batch can be kept at room temperature for a few days on the counter!
